The aim of the invention is to mechanize the cutting process. The device contains a knife element 1 mounted on a fixed frame 2, a holder 3 with horizontally arranged feed lines 4 adjacent to its ends, a stop fixed in the holder 3, formed by two angled sections 5 with cutting edges facing the direction of movement of the carcass leg, and a spring-loaded element 6, fixed at one end on a drive shaft located in front of the abutment in the direction of travel of the carcasses on the outer side of one of the guide. This knife element 1 is mounted on the shaft of the clamping element 6 and has such a length that its ends protrude beyond the guides 4 and its cutting blade is rounded and directed towards the stop, and the clamping element 6 is mounted on the shaft so that it can rotate to a limited angle and equipped with a rotation limiter, 8. 3 il. The cutter element 1 is actuated in sync with the conveyor 11 and therefore it always releases the passage when the leg of the bird enters the device, in particular, into the guides 4 of the holder 3. Thus, the proposed device provides the mechanization of the process of cutting the tibia of the suspended on the conveyor of bird carcass at the processing stage.
